What is "Kamairicha"?

Unlike regular green tea, which is processed by steaming, this tea is made by roasting the tea leaves in a pot heated over an open flame.

Hand-made pan-fried tea is a very rare tea, with only a very small amount being produced in Japan today.

How "Kamairicha" is made, all by hand

The tea leaves are hand-picked one by one

Taking into consideration the seasonal temperature and the condition of the tea leaves, we hand-pick the ingredients that will best suit the tea we want to make. We are able to carefully select "only the best quality leaves" to use as ingredients.

Roasting in a pot creates a unique aroma.

This is a handmade kettle. Firewood is placed inside the brick base, the iron pot is heated, and the tea leaves are roasted by hand.

This produces tea with a unique aroma called "kamaka."

Delicate manual roasting process

The tea making process (processing raw tea leaves into tea) is a delicate art that involves countless elements , such as the temperature and time at which the tea leaves are heated, the rolling to distribute the moisture evenly, and the final heating temperature.
